Patties with spinach and cheese

If you are used to the patties with tuna or egg, our patties are going to be a surprise.

Ingredients (4 people)

  • 1 bag of wafers for patties (16 wafers)
  • Fresh spinach 250 g
  • 1 onion
  • A cheese you like 125 g
  • Olive oil
  • Salt

Boil the spinach in abundant water with salt. When they are done, place them on a strainer to remove the water.

Put a little bit of oil on a pan and when warm, add the onion cut in small pieces.

When the onion is transparent, add the boiled spinach, mix and cook 5 min.

Take out the spinach with onion and put it in a bowl.

Place the wafers on a wooden table and with a spoon, place a small amount of spinach with onion (see photo). Add the cheese cut in small cubes. The cheese of your choice will have a lot to do with the final taste (cured or semi-cured sheep cheese for smooth flavor, goat cheese for a stronger one and if you feel like something stronger, then go for blue cheese).

Deep a finger in water and wet the periphery of the wafer, close and to seal it, mark the periphery with a fork.

Place abundant olive oil in a pan and wait until it is rather hot.

Add the patties carefully one by one and make sure they are well separated. Pay attention to the oil to avoid burns.

Fry the patties in small groups, turning them until they are brown on both sides.

Take the patties out of the oil and place them on a plate with kitchen paper to remove the excess of oil.

Serve them warm with a green salad as a side dish (if you feel like it).
