Ensaladilla

The traditional recipe has tuna and red pepper, but you will see that without those ingredients it comes out very nice.

Ingredients (4 people)

  • 4 medium size potatoes
  • 4 carrots
  • 1 small can of boiled green beans
  • 4 eggs
  • 1 small jar of mayonnaise sauce
  • 1 bag of olives without bones
  • 1 vegetable broth cube

In a pot, warm up abundant water with the vegetable broth cube.

When it boils, add the potatoes cut in cubes and the carrots cut in thin half slices.

Simultaneously, in a small pot boil the eggs during 6-8 min.

When the potatoes and carrots are soft, remove them from the fire and place them carefully in a strainer placed on a pot to collect the liquid that you can freeze and use to cook other recipes (such as risottos and paellas).

Place the boiled potatoes and carrots on a large plate and wait for them to cool down.

Add the green beans, olives, three boiled eggs cut in small/medium pieces and the mayonnaise sauce. Mix well.

Cover with mayonnaise and for decoration, place a boiled egg cut in slices and olives.

This dish can be served at room temperature (it will be more tasty) or after keeping it in the fridge for a little time.
